Flourless orange cake


SERVES: 12        PREP TIME: 10 minutes        COOKING TIME:   30 minutes
FREE FROM: Gluten, dairy

INGREDIENTS    
2 ½ cups ground almonds (almond meal)
Zest or two organic oranges* or one orange and 2 lemons
2 tsp. vanilla essences
3 Organic eggs
½ cup honey or Maple syrup
½ tsp. sea salt

METHOD

  1.  Preheat oven to 175° (155°C fan forced)
  2. Grease and line a 20cm diameter cake tin or silicon cake mould
  3. Combine ground almonds, orange/lemon zest, vanilla, eggs, honey/maple syrup and sea salt in a bowl and stir well
  4. Transfer mixture to prepared cake tin
  5. Bake for 35 minutes or until golden and cooked through (a skewer in the centre should come out clean).  Check cake half way through cooking time to make sure that it isn't burning as if your oven is too hot this cake can burn very quickly
  6. Cool in the tin for 30 minutes then turn onto a rack to cool completely
  7. You can drizzle this cake with more honey/maple syrup if you like, once it is cooked and cooled.   Alternatively, before baking, add some flaked almonds to the top.  However, if the cake has not been over-cooked then it should be moist enough that you don't need to add further honey/maple syrup.

  • This is a delicious cake and super easy to make.  Encourage older children to take over the baking of this one to help make quick and easy snack options for their school lunch box
  • Organic oranges and lemons are best to use in this recipe.   Then you can be guaranteed that the zest is going to be chemical spray free
  • This cake is only suitable for a school lunchbox allowing nuts
  • When buying almond meal make sure it has been kept in the refrigerator since being made into meal otherwise it goes stale and rancid once the oils of the almond have been crushed.   This can then act as a pro-oxidant in the body - not at all ideal
