This rainbow fried rice is super nutritious! It is packed full of vegetables, protein balanced and high in fiber. It is super quick and easy to prepare and cook so perfect for a midweek meal. Make more than you need for dinner as it's great for left-overs in a thermos the next day for lunch.

PREP & COOKING TIME
15 minutes if rice cooked before hand. Generally brown rice takes 20 minutes to cook a cup (dry weight).
